Chocolate Chip Cookie Sticks w/ Mocha Dipping Chocolate

Happy Belated Mother's Day to all the wonderful Moms out there.  I decided not to do a Mother's Day post, simply because Mother's Day is a little bitter sweet for me.  I lost my mom back in 2007, and we were as close as close could be, because she was a single mom and I was an only child.  So, I'm sure that you can see why Mother's Day and other holidays and birthdays are hard for me.  My mom was the person who got me into cooking/baking, cake decorating and crafts.  She was such a strong and very inspiring woman, who didn't get to do all the things she wanted to do because of her health condition, but she never let that stop her from being one of the most awesome people you could ever meet.  I am sure that's why I am the way I am, because she raised me to be very passionate, understanding, loving, and the list goes on and on.  Which is why I have decided to not have the blog be so general anymore. 

Today will mark the first day in the new direction of the blog.  I have decided that I am going to try to focus more on the baking/cooking, crafting/DIY side of things since those things are what I love the most and are most passionate about (you know, aside from family).  So, please bear with me and don't be too harsh as I am a beginner and I am still learning the ropes, so I have quite a long way to go before the blog is where I want it to be. 

With all that said, lets get to the recipe shall we?  Today, I am sharing a recipe for Chocolate Chip Cookie Sticks w/ Mocha Dipping Chocolate. 

I came up with recipe because my lovely son, yet again, wanted me to make some chocolate chip cookies (original recipe can be found here), and since I had quite a few bags of chocolate chips stashed away, I thought I would use them this week and call this my:


I have to say, that I am a little bit tired of doing the same chocolate chip cookies every time, and although they are delicious, I decided they needed a little change this time around.   (I did make some just regular for the kiddos though.)  This recipe, however, is for the chocolate and coffee lover in you.

I started with the original cookie recipe (here) and thought I would try to form them into sticks and bake them and they would work out fine.  Ok, so I was wrong, and this is what I got.

Yeah, not very appetizing are they?  So, I thought I was going to have to go back to the drawing board, but all of a sudden, out of the corner of my eye, I see my butcher knife and a light bulb went off.  Since these (whatever they are) were still hot, I used the knife to cut them into strips and it worked like a charm.  I was so excited that I didn't have to bake again.  When the cookie sticks had cooled, they were perfect.  A little crunch on the outside, but nice and soft on the inside, just the way I like them. 

I then used some more of those chocolate chips that I had to make a Mocha Ganache Dipping Sauce. 

Oh, I was in chocolate, coffee heaven for a few minutes.  I honestly was surprised at how good it actually was.  This is what I used to make the Mocha Dipping Sauce.

Yes, these three simple ingredients made a very tasty dipping sauce.  I just halved a recipe of my normal chocolate ganache, and added 1tblsp of the Pure Coffee Extract, and it was perfect. 

This is the halved recipe, which makes about 1 cup of dipping sauce.


1 Cup of Chocolate Chips (Doesn't have to be Milk Chocolate, whatever you prefer or have on hand is fine).

1/2 Cup Whipping Cream or Heavy Cream

1 Tbls Pure Coffee Exact (I started with a half tbls, but it wasn't enough for my taste, so start with half and add more to suit your palette.)  I had been trying to come up with a reason to try this flavor and I think it will work fine in lots of other recipes out there, so give it try if you like coffee flavored treats.


Place 1 cup of chocolate chips in a microwave safe dish and pour the cream over the chocolate chips.  Try to make sure that all of the chips have at least been touched by the cream. 

Microwave on high for 1 minute, and let stand in the microwave for about 2 minutes.   Feel free to use a doubel boiler to melt the chip and cream mixture. 

Remove the dish from the microwave, and before mixing the chocolate and cream, add the coffee flavor.  Stir the mixture until well combined and silky smooth. 

Then you're done, and you can grab your cookie sticks and enjoy this treat!!!

Make sure your cookie sticks are completely cooled because you don't want them to fall apart while dipping.
