Homemade Hot Chocolate & Snow Ice Cream

Well, the desert got snow last night.  Couldn't wait to get the kids outside to play in it.  We usually don't get any snow here until January, so my kids are really enjoying themselves, but with snow, comes cold.  The rememdy?  Delicious Homemade Hot Chocolate!!!



Homemade Hot Chocolate
Adapted from The Pioneer Woman Cooks

You will need:
2 Cups of Milk
1/2 Cup Semi-Sweet Chocolate Chips
2 Tsp Sugar
1 Teaspoon Vanilla Flavor

Directions:
1.  Pour your milk into a pot.  Heat the milk over medium-low heat until it begins to steam a little
     (be careful not to scorch your milk).  Turn your heat down if your milk is sticking to your pot.

2.  Add the vanilla flavor and sugar to the milk and stir until the sugar is dissolved.

3.  Add your chocolate chips, and stir until all the chips are melted. 

Pour and serve.  Super easy and delicious and delicious on cold snow days!!!



And for an extra special treat (for the ice cream lovers out there like me), Old Fashioned Snow Ice Cream!!!  I remember my Mom and Grandma making snow ice cream every time we got the slightest little bit of snow.  I grew up in South Carolina, so snow would only come once in a while and it would only last a few days at most, at least from what I can remember.  It may have been more (I tend to forget things more these days with a busy schedule and two very active children).  Anyway, I figured I would share the recipe that I remember them using to make that good old fashioned snow ice cream that I love so much. 


This ice cream is perfect because you can dig in right away and not have to wait for freezing, unless you want it stiff.  The kids will love not having to wait on the ice cream to freeze!

Homemade Snow Ice Cream

You will need:
4 Cups of Fresh Snow
2 Tbsp Sugar
1/2 Can of Evaporated Milk
2 Tsp Vanilla Flavor 


 Directions:
Put it all in a bowl and mix it together.  Feel free to eat it right away or place it in an air tight container and freeze it for a bit. 

You can add more milk or sugar to suit your tastes.  I'm sure that other flavors would work in this as well, but I am a simple vanilla lover, so vanilla is always perfect for me.


The "Even More" Version (Pictured Above)
This version makes about a half a gallon ice cream container or a little more.

You will need:
7 Cups of Fresh Snow
1 Can of Condensed Milk
1/4 Sugar
2 Tbsp Vanilla Flavor
1 8oz Container of Whipped Topping
3/4 Cup Whipping Cream

Directions:
Put in all in a bowl and mix until it comes together.  This recipe can be eaten right away as well.  I used my stand mixer to make it easier on myself.  I placed it in a sealed container and let it freeze until I was ready to eat it.  Delicious!!!
** Please note that this ice cream is made of snow, for a quick and tasty treat, so it will not be smooth like regular homemade ice cream.  It will have ice flakes in it.
